The carob tree (botanical name: Ceratonia siliqua ) is a member of the legume family.
The carob trees may be male or female (dioique).
The carob fruit has excellent nutritional value; it is rich in sugar and protein (it contains also Magnesium, Calcium, Phosphorus, vitamins A, B, B2, B3 and D).
"Algaroba" is an oil extracted from carob seeds used for medicinal purposes
